Baked cauliflower

This recipe is life changing.  I’m constantly on the hunt for tasty healthy veggies as a side dish.  For me its a complete waste to fix a veggie if you douse it in unhealthy fats or sauces.  I came across this idea a couple years ago and it has since become a staple in our household.

The original recipe calls for the cauliflower head to be sliced into “steaks”.  I usually just cut it into smaller pieces, they fit better on my plate this way. 

Once cut up put the whole head of cauliflower into a gallon size zip lock bag and drizzle 1.5 tbsp good quality extra virgin olive oil.  Do not substitute with vegetable oil.  Toss in 2 tsp. sea salt and a tsp. fresh cracked black pepper. 

My favorite part, or my daughters favorite part actually, close the bag and shake to distribute evenly.  Either spray a baking pan with nonstick spray or put down a piece of foil.  Dump all contents onto the baking sheet, trying to keep as much of the excess oil in the bag. 

I should have mentioned your oven should be preheating all this time on 400°. 😟

Once preheated slide your baking sheet into the oven and wait ~20 minutes.  You should flip them once and the cauliflower should be light brown on the bottom. 

You will know they are done when they are soft and golden brown.

These are so delicious, honestly we (yes this includes my 5 year old) eat a whole head of cauliflower in a sitting this way.  😋
